1. Half and butterfly chicken breast(s). Rub with some salt.
2. Take chopped spinach + mozzarella + parmesan + the round part of middle bacon (to Murkians that's the bit that looks like "Canadian bacon") and put it inside the chicken.
3. Wrap the long piece of bacon around the chicken and hold it in place with a bamboo skewer.
4. Place on a greased baking tray. Drizzle with some olive oil, salt and freshly ground pepper.
5. Bake until cooked. Eat.
Looks a little bit dry coz these are the ones that I left out sitting for a couple hours before microwaving and eating at 11pm... but they're delicious and steaming and oozing cheese when they're fresh out of the oven.... mmmmm....
